Sous Chef


The Hong Kong Jockey Club
Founded in 1884, The Hong Kong Jockey Club (\"the Club\") is a world-class racing club that acts continuously for the betterment of our society. The Club has a unique integrated business model, comprising racing and racecourse entertainment, a membership club, responsible sports wagering and lottery, and charities and community contribution. Through this model, the Club generates economic and social value for the community and supports the HKSAR Government in combatting illegal gambling.
The Department
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.
The Job
Assist the Executive Sous Chef to monitor the food preparation and production in the assigned kitchen(s)
Ensure adequate supply of food items during buffet time and monitor the food wastage at a minimum level
Supervise the production of new food items and sample tasting for continuous improvement
Ensure food storage and hygiene standards are followed in line with the Club's guideline
Assist administrative work such as staff coaching, training and food cost control etc
Keep abreast of the market trends and contemporary food presentation
Encourage consistency in producing excellent food to exceed guests expectation
To monitor food production within budget and work schedule while food quality and consistency are up kept
Work location in Shatin and Happy Valley
About You
Minimum of 8 years' relevant experience in prestigious hotels or restaurants with 3 yrs in a similar position
Knowledge in hygiene management system is preferred
Keep abreast of the market trends and contemporary food presentation
Encourage consistency in producing excellent food to exceed guests expectation
Build harmonious work and establish good relations with team members
Communicate effectively in Chinese
To monitor food production within budget and work schedule while food quality and consistency are up kept
